In a mixing bowl place the Simon Gault Home Cuisine Indian seasoning and whisk in the water to make a paste. Pour in the vinegar and whisk, then slowly whisk in the olive oil to complete the dressing. Cut the cucumber length ways into quarters and then roughly chop into pieces about the same size as the tomatoes. Place the cut cucumber into the finished dressing along with the tomatoes, add basil and mix with a spoon. Transfer to a serving bowl and serve.
