Method

  1. Preheat oven to 185°C.
  2. Patties: In a large bowl, add mince, onion, eggs, first measure of Italian seasoning and stock concentrate. Combine thoroughly then form into 6 large meat patties.
  3. In a frying pan, heat first measure of oil over medium heat until shimmering. Add patties and cook 5 minutes each side, or to your desired level of doneness. Remove from pan and set aside.
  4. Mushrooms: Place on a baking tray and drizzle with oil and sprinkle over Italian seasoning. Bake in oven 4–5 minutes.
  5. Assembly: Place burger bun halves, insides up, on a baking tray. Sprinkle bun top halves with cheese (my favourite is smoked provolone). Bake bun halves in oven until cheese has melted.
  6. Spread bun bottom halves with mayonnaise then layer up with lettuce, tomato, beef patties then mushrooms. Top with cheesy bun top halves and serve.

Use your hands to mix the meat patty ingredients.


Shimmering means the oil is heated to a point where the surface begins to ripple but does not smoke.


To stop the burgers from going everywhere when you eat them, hold them in place with a bamboo skewer inserted into the middle.
