Spicy Leaf Salad with Mexican Dressing

Salad Ingredients

  • 4 generous handfuls of mixed lettuce leaves (not mesclun)
  • 1 generous handful of mixed fresh herbs (coriander, basil, & mint)
  • 1 cup cherry tomatoes, halved
  • u00bd telegraph cucumber, cut into rounds
  • 1 avocado, peeled and cubed
  • 6 raw almonds

Dressing Ingredients

  • 1 tbsp fresh lime juice
  • 1 small shallot, finely chopped
  • 1 tsp Simon Gault Mexican seasoning
  • 1x 10mm piece of fresh ginger, peeled and grated
  • 1 tbsp liquid honey
  • u00bc cup extra virgin olive oil
  • Salt and pepper to taste

Spicy Leaf Salad with Mexican Dressing

In a bowl combine the lime juice, shallots, Simon Gault Mexican seasoning, ginger and honey. Gradually whisk in the olive oil and season to taste with salt and pepper. Keep cold and set aside. In a separate bowl combine the lettuce, herbs, tomatoes, cucumber and avocado. Drizzle enough Mexican lime and ginger dressing to coat the leaves but not weigh them down. Place into a serving bowl or platter and grate the almonds over the salad using a micro place to create an almond like snow.
