Method

  1. Preheat oven to 190°C.
  2. Place pumpkin on a roasting tray and drizzle oil over. Bake in oven for 15–20 minutes or until pumpkin is very soft.
  3. Transfer pumpkin to a food processor then add cream cheese and Indian seasoning. Purée until smooth.
  4. Taste, and if you want a stronger flavour, simply add more Indian seasoning to your liking.
  5. Transfer dip to a bowl, sprinkle a little Indian seasoning over the top and serve with corn chips or crackers.
