An authentic Italian pasta dough recipe for making homemade lasagne sheets or your favourite pasta shapes.

Method

  1. Using a food processor, add all ingredients and pulse until combined.
  2. Turn dough out onto a bench and form into a log. Enclose dough in plastic wrap and leave to rest at room temperature for 20 minutes.
  3. Once rested, cut dough in 4 pieces and roll each through a pasta machine 10 times on the widest setting, folding the pasta back on itself twice between each pass. Then roll sheets through the machine again, reducing the setting each time, up to the second-to-last setting.
  4. Cut sheets in lengths the same size as the dish you will cook the lasagne in. Blanch sheets in boiling salted water for 3 minutes, then remove, pat dry and set aside for cooking.
