Simon’s Indian Cheesy Corn and Bacon Muffins

Method

  1. Preheat oven to 200°C. Grease a 12-hole muffin tray with butter and set aside.
  2. In a mixing bowl, sift and combine flour, salt and baking powder. Add Indian seasoning, cheese and bacon pieces.
  3. In a separate bowl, lightly beat egg then stir in milk, stock concentrate and corn. Pour into flour mixture and stir until just combined.
  4. Spoon mixture into prepared tray then place in oven and cook for 15–20 minutes, until a skewer inserted into the middle comes out clean.
  5. Remove muffins from oven and leave to cool in the tray before turning out.
  6. Serve with your favourite pickle or salsa.
