Method
- Preheat oven to 200°C. Grease a 12-hole muffin tray with butter and set aside.
- In a mixing bowl, sift and combine flour, salt and baking powder. Add Indian seasoning, cheese and bacon pieces.
- In a separate bowl, lightly beat egg then stir in milk, stock concentrate and corn. Pour into flour mixture and stir until just combined.
- Spoon mixture into prepared tray then place in oven and cook for 15–20 minutes, until a skewer inserted into the middle comes out clean.
- Remove muffins from oven and leave to cool in the tray before turning out.
- Serve with your favourite pickle or salsa.
