In a heavy bottomed pot heat the olive oil. Add the garlic, onions, celery, carrots and cook for 5-8 minutes on a medium high heat or until the vegetables start to soften. Add the tomato paste and Simon Gault Home Cuisine Italian seasoning and cook for a further 3 minutes. Add the chopped tomatoes, red wine, Simon Gault Home Cuisine chicken or vegetable stock concentrate and water. Bring to the boil then simmer for 5 minutes. Add pepper to taste. Serve in bowls or cups with crème fraîche or sour cream and crusty garlic bread.
