Preheat oven to 180 °C. In a large frypan heat the oil, add the onion and cauliflower and sauté for 4-6 minutes until the cauliflower is tender. Add the Simon Gault Home Cuisine Mexican seasoning and cook for another minute, transfer to a bowl and set aside. Place tortillas on 2 large baking trays. Brush tortillas lightly with olive oil and prick the tortillas several times with fork. Bake for 6 minutes or until lightly browned and puffed. Set aside to cool. Top the tortillas with cauliflower, chorizo and tomato then grated cheese. Return to the oven for 6—7 minutes or until the cheese has melted. Top with sliced spring onion and cut into wedges. Serve warm.
