Prawns
Slaw
Method
- In a small bowl, add goji berries and lime juice. Set aside for 20 minutes to soften. Strain off lime juice before using.
Dressing
- Meanwhile, in a bowl add all dressing ingredients and mix well to combine.
- Refrigerate until ready to serve with slaw, or simply have as a tasty dip.
Prawns
- In a bowl, add prawns and Moroccan seasoning and mix well.
- Preheat BBQ or frying pan over medium-high heat. Add oil and heat until shimmering. Add prawns and cook for 90 seconds on each side.
- Remove from heat and set aside to add to slaw, or enjoy them as they are.
Slaw
- In a mixing bowl, add both cabbages and softened, strained goji berries. Add cooked prawns and some Moroccan Coconut Dressing and mix well.
- Transfer to a large bowl and serve.
