Moroccan Summer Prawn Slaw

Ingredients

Moroccan Coconut Dressing
Prawns
Slaw

Method

  1. In a small bowl, add goji berries and lime juice. Set aside for 20 minutes to soften. Strain off lime juice before using.
Dressing
  1. Meanwhile, in a bowl add all dressing ingredients and mix well to combine.
  2. Refrigerate until ready to serve with slaw, or simply have as a tasty dip.
Prawns
  1. In a bowl, add prawns and Moroccan seasoning and mix well.
  2. Preheat BBQ or frying pan over medium-high heat. Add oil and heat until shimmering. Add prawns and cook for 90 seconds on each side.
  3. Remove from heat and set aside to add to slaw, or enjoy them as they are.
Slaw
  1. In a mixing bowl, add both cabbages and softened, strained goji berries. Add cooked prawns and some Moroccan Coconut Dressing and mix well.
  2. Transfer to a large bowl and serve.

Shimmering means the oil is heated to a point where the surface begins to ripple but does not smoke.
