Mexican Chicken Nibbles

Method

  1. Preheat oven to 180°C.
  2. In a large mixing bowl, whisk together ketchup, soy sauce, sugar and Mexican seasoning. Add chicken nibbles and toss to coat.
  3. Place nibbles and marinade in an oven dish and bake for 20 minutes, or until cooked through (there should be no pink flesh and juices should run clear when pierced with a sharp knife in the thickest part). Using kitchen tongs, place nibbles in a bowl and set aside (keep warm).
  4. Pour all remaining marinade from oven dish into a saucepan over medium heat. Bring to a simmer and reduce by half.
  5. To serve, stack nibbles on a serving plate and pour reduced marinade over the top. Top with sour cream and coriander and dig in!
