Maple and Soy Marinated Chicken Tacos

Method

  1. In a bowl, whisk together maple syrup, soy sauce, Mexican seasoning, garlic and first measure of oil. Add chicken pieces and mix well to coat. Set aside to marinate for at least 30 minutes (or overnight).
  2. Heat second measure of oil in a frying pan. Add chicken and cook for 6–8 minutes or until cooked through (there should be no pink flesh and juices should run clear when pierced with a sharp knife).
  3. Fill taco shells with lettuce and tomato then spoon in chicken mix. Top with crumbled feta and mango then sprinkle with coriander.
  4. Serve with lime wedges and enjoy!
