Indian Scrambled Eggs with Jalapeño Crème Fraîche

Method

  1. In a large bowl add eggs, Indian seasoning and salt. Whisk well to combine.
  2. In a large pan over medium heat, melt butter then pour in egg mixture. As eggs begin to set, gently pull them across the pan with a spatula to form large, soft curds. Continue cooking—pulling, lifting and folding eggs—until thickened and no visible liquid egg remains.
  3. Combine crème fraiche and Tabasco.
  4. Place a piece of toast on each plate then top with scrambled egg. Serve with a dollop of jalapeño crème fraîche and a sprinkle of parsley.

Simon says ...

If you like things a bit hotter, add more Tabasco.
