Method
- In a large bowl, add melon, cucumber, walnuts and kale. Mix to combine then set aside.
- In a small bowl, combine mayonnaise, cider vinegar, mint, honey, orange zest and paprika. Set aside.
- Heat oil in a frying pan over medium heat. Add halloumi and cook until golden brown on both sides. Remove from pan and drain excess oil on a paper towel.
- Transfer salad to a large salad bowl or serving platter. Top salad with halloumi planks then sprinkle over pumpkin seeds and goji berries. Drizzle dressing over the top and serve.
