Method

  1. In a large bowl, add melon, cucumber, walnuts and kale. Mix to combine then set aside.
  2. In a small bowl, combine mayonnaise, cider vinegar, mint, honey, orange zest and paprika. Set aside.
  3. Heat oil in a frying pan over medium heat. Add halloumi and cook until golden brown on both sides. Remove from pan and drain excess oil on a paper towel.
  4. Transfer salad to a large salad bowl or serving platter. Top salad with halloumi planks then sprinkle over pumpkin seeds and goji berries. Drizzle dressing over the top and serve.

If you can’t find or don’t like kale, use 1 head of cos lettuce instead (per serving for 4).
