Here is an outstanding side dish we served at my restaurant, Giraffe, that will transform any meal. Not only does it taste incredible, it also looks amazing. Grab a selection of coloured carrots: white, yellow, purple and the trusty old orange.

Ingredients

Pecan and pumpkin-seed crumble
Rub
Carrots
Dill yoghurt

Method

Crumble
  1. Preheat oven to 180°C. Line a baking tray with baking paper.
  2. In a bowl, whisk egg white until foamy. Add remaining crumble ingredients and toss well until evenly coated. Transfer to prepared tray and toast in oven for xxx minutes, until starting to brown. Remove from oven and set aside (leave oven on at 180°C).
Rub
  1. Meanwhile, in a small bowl add all rub ingredients and mix well to combine. Set aside.
Carrots
  1. Fill an oven dish with 200ml water and place in oven.
  2. In a large bowl add carrots, rub and olive oil. Mix well to ensure carrots are evenly coated then transfer to a baking dish. Cover carrots with tinfoil then bake in oven for 30 minutes.
Dill yoghurt
  1. Meanwhile, in a small bowl add all dill yoghurt ingredients. Mix well to combine and set aside.
To serve
  1. Remove carrots from oven and transfer to a serving dish.
  2. Sprinkle crumble over the top and finish with a drizzle of dill yoghurt.
