This recipe is quick and easy to whip up, and one of those staples everyone should have in their repertoire.

  1. In a medium saucepan, add wine, first measure of water and stock concentrate. Bring to the boil then reduce heat and simmer gently for 5 minutes.
  2. In a small bowl, combine cornflour and remaining water and whisk out any lumps.
  3. Slowly stir cornflour-water mixture into pan. Bring to the boil, stirring continuously, then simmer for 5 minutes until thickened.

If you're roasting a bird, add pan juices to gravy at the end, for an extra flavour boost.
