Courgette and Mint Salad

Ingredients

4 courgettes
1 large handful fresh mint leaves, roughly chopped
1 Tbs white balsamic vinegar (or apple cider vinegar)
1 tsp flake salt

Method

Using a potato peeler (or mandolin), slice courgette in ribbons.
Place all ingredients in a bowl and toss gently to combine.
