Method

  1. Preheat oven to 150°C.
  2. Place ham on an oven tray and heat in oven for 15 minutes (this will allow you to remove the skin from the ham more easily).
  3. In a large mixing bowl, combine jam and lemon grappa.
  4. Remove ham from oven and increase temperature to 180°C. Peel off skin, leaving as much of the fat layer intact as possible. Score fat diagonally to make diamond shapes then stud with cloves.
  5. Brush ham with a generous coating of glaze. Cook in oven for 1 hour and 15 minutes, basting ham after 15 minutes, again at the 45-minute point, and a final baste at 1 hour into cooking.
  6. Remove ham from oven and set aside to rest for 30 minutes before carving.
