Method

  1. Preheat oven to 160°C. Line a 21cm cake tin with baking paper.
  2. In a mixing bowl, beat together egg yolks and sugar until thick and creamy.
  3. In a separate bowl, whisk egg whites until soft peaks form.
  4. In a large saucepan over low heat, add butter, chocolate and Kahlúa and gently heat, stirring regularly, until melted and combined. Stir in egg yolk and sugar mixture then fold in flour and salt. Gently fold in egg whites.
  5. Pour mixture into prepared tin and bake in oven for 30–40 minutes, until a skewer inserted in the middle comes out clean.
  6. Remove cake from tin and place on a wire rack to cool.
  7. When cooled, place cake on a serving plate and sprinkle over cinnamon. Top with blueberries (if using) and serve.
