Bruce’s Mum’s Meatloaf with Coffee Sauce

This is awesome comfort food. When I first heard the mention of coffee sauce, I was a tad alarmed. However, the reality is, it’s sensational!

Method

Meatloaf
  1. Preheat oven to 180°C. Grease a large rectangle casserole dish with olive oil.
  2. In a large mixing bowl add all ingredients and, using your hands, mix together until well combined. Form mixture in a loaf shape and place in prepared dish. Bake in oven for 1½ hours.
Sauce
  1. In a saucepan over medium heat, add all ingredients and heat until sugar has dissolved.
  2. When loaf has been in the oven for 40 minutes, pour sauce over and continue to brush top of loaf every 15 minutes for remainder of cooking time.
  3. Remove dish from oven and carefully transfer loaf to a board. Slice then serve hot with sauce drizzled over the top.

Simon says ...

If you can’t find sausage meat, use good-quality sausages and squeeze meat from casings.


So good served with mash on the side, leftovers make great sandwiches, or cut slices in smaller pieces for kids’ lunchboxes.
