In a mixing bowl combine the sweet corn and Simon Gault Indian seasoning. Lightly butter the bread on both sides, divide the corn mixture evenly between the first four slices of bread. Top each slice with equal amounts of the tasty cheese, place the second four slices of bread on top and cook in a heavy based frypan for 3-4 minutes per side or until golden. Using a fish slice transfer to a serving plate and allow to cool for a couple of minutes. Serve with a sprinkling of Simon Gault Indian seasoning over the top.
