Beef and bacon mince

Method

Guacamole
  1. In a mixing bowl, add red onion, lime juice, salt, garlic, most of the jalapeño (if using, keep a little aside for serving) and avocado.
  2. Mash with a fork until combined and set aside.
Mince
  1. In a non-stick frying pan, heat oil over medium heat. Add onion and cook, stirring regularly, until soft and translucent.
  2. Add mince and bacon and cook, stirring, for 5–6 minutes or until browned.
  3. Add kidney beans, Mexican seasoning, stock concentrate and water. Stir to combine then simmer gently until thickened.
Assembly
  1. Place corn chips on a heatproof plate. Spoon over mince mixture then top with cheese. Bake in oven for 10 minutes or until cheese has melted.
  2. Serve topped with sour cream, guacamole, coriander and remaining jalapeño (if using).
