Guacamole
- In a mixing bowl, add red onion, lime juice, salt, garlic, most of the jalapeño (if using, keep a little aside for serving) and avocado.
- Mash with a fork until combined and set aside.
Mince
- In a non-stick frying pan, heat oil over medium heat. Add onion and cook, stirring regularly, until soft and translucent.
- Add mince and bacon and cook, stirring, for 5–6 minutes or until browned.
- Add kidney beans, Mexican seasoning, stock concentrate and water. Stir to combine then simmer gently until thickened.
Assembly
- Place corn chips on a heatproof plate. Spoon over mince mixture then top with cheese. Bake in oven for 10 minutes or until cheese has melted.
- Serve topped with sour cream, guacamole, coriander and remaining jalapeño (if using).
