Lay the steaks flat and generously season each steak on both sides, each with a different Simon Gault seasoning and lightly massage the seasonings into the meat. In a frypan heat the olive oil until it begins to shimmer. Place the steaks into the frypan and cook on a medium high heat for 3-4 minutes on each side or until you have cooked it to your desired degree of cooking. Remove from the pan and allow the steaks to rest for at least 5 minutes to allow the steak to retain all the juices. You can now either serve on a plate as a steak with accompaniments or slice the steaks and serve on a platter.
