Method

  1. In a large pot, heat butter over medium heat. Add onion and garlic and cook, stirring regularly, until onion is soft and translucent.
  2. Add Moroccan seasoning, cauliflower, milk, stock concentrate and hot water. Mix to combine then bring to a gentle simmer and cook for around 15 minutes or until cauliflower is soft (check by piercing with a skewer).
  3. Remove pot from heat and process soup with a stick blender until smooth. Return pot to heat, add coconut cream and bring to the boil. Season with salt and pepper to taste and serve.

Serve with chopped fresh herbs, a drizzle of extra-virgin olive oil and your favourite bread.


Use a food processor or blender if you don’t have a stick blender.
