Merry Mexican-Glazed Ham

  • 1 x 4–5 kg half leg of ham
  • 1/2 cup maple syrup
  • 1/2 cup rum
  • 2 tbsp Simon Gault Home Cuisine Mexican seasoning
  • handful cloves

Merry Mexican-Glazed Ham

Cooking time
  1. Preheat oven to 150ºC
  2. Place the ham on an oven tray and heat in the oven for 15 minutes (this will allow you to remove the skin from the ham, easier)
  3. In a large mixing bowl, mix together the maple syrup, rum, and Simon Gault Home Cuisine Mexican Seasoning
  4. Remove the ham from the oven and increase the temperature to 180ºC
  5. Peel off the skin, leaving as much of the fat layer intact as possible
  6. Score the fat diagonally — to make diamond shapes — and stud with cloves
  7. Brush the ham with a generous coating of the glaze and place in the oven
  8. Baste the ham after 15 minutes; again at the 45 minute point, with a final baste at 1 hour
  9. After being in the oven for 1 hour 15 minutes, remove the ham from the oven and allow to rest before carving
